If you want to ride roughstock, I always recommend Sankey Rodeo Schools. I have personal experience with this group and they are truly the best in the business. Make sure to tell them that Ralph from About Rodeo sent you!
Unfortunately, rodeo is not represented equally in all areas of the country so you may have to travel to satisfy your urge to compete. Remember that travelling is a large and exciting part of the rodeo experience.
